Cooper, Maria E's Obituary
Maria E. Cooper (née Galindo), 83, of Roatan, Honduras, passed away peacefully on Sunday, January 19, 2025. Born in La Lima, Cortes, Honduras on December 9, 1941, to Margarita and Policarpo Galindo, Maria lived a life of unwavering faith, selfless service, and boundless love for her family and community.
At the age of 13, Maria attended SS School, a Catholic boarding school in Covington, Louisiana, nurturing a deep devotion to God that would guide her throughout her life. Her journey led her to marry the love of her life, Theodore E. Cooper, on March 5, 1960. Their enduring marriage, a testament to their commitment, blossomed into a family of five cherished children: Ellana, Sondra, Quincy, Mary, and Audrey. Together, they built a life on a five-acre farm in Seffner, Florida, where Maria instilled in her children the values of faith, hard work, and compassion.
In 1993, Maria and Theodore returned to Roatan, where they established the Bamboo Hut Restaurant and Laundry Service. Saturday evening Catholic Mass was celebrated in the bamboo grove behind their home for many years, reflecting Maria's deep faith and her welcoming spirit. She faced life's challenges with grace and resilience, battling cancer twice and, in her later years, CHF.
Maria was preceded in death by her beloved husband, Theodore, and her parents. She is survived by her five children; her brothers; her grandchildren; her great-grandchildren; numerous nieces and nephews; and a wide circle of extended family and friends who were blessed by her presence. Her humility and gentle spirit touched countless lives. She possessed a backbone of pure steel and will be eternally remembered for her unshakeable trust in Jesus!
